Leek and potato frittata with carrot slaw

Recipe:

Ingredients:

  • 1 x leek and potato frittata

  • 1 x carrot

  • 1 x apple

  • 2 tblsp olive oil

  • 1 tblsp lemon juice

  • salt to season 

Method:

  1. Warm up the frittata in the oven.

  2. Grate or shred the carrots and apple.

  3. Combine carrots and apple in a bowl and mix with olive oil and lemon juice, season with salt.

  4. Serve alongside warmed frittata.

  5. Enjoy!
