Mushroom and spinach frittata with tomato salad

Recipe:

Ingredients:

  • 1 x mushroom and spinach frittata

  • 2 x tomatoes

  • 1/2 cucumber

  • 1 tblsp olive oil

  • 1 tblsp apple cider vinegar

  • garnish of rocket and rocket flowers

  • salt to season

Method:

  1. Warm up the frittata in the oven

  2. Slice tomatoes and cucumber into wedges, place on serving plate alongside warm frittata.

  3. Drizzle with olive oil and sprinkle with salt.

  4. Garnish with rocket leaves and flowers and enjoy.
